Since around a day, across Netherlands I have been facing very low mobile data speeds and sometimes the signal can’t even find 5g and stuck on 4g but still very slow speeds like can’t even load this website. Even when it does find 5g signal it’s one or two points and still really slow. Any thing I can do to debug this?

Odido got 8 million sims active on the same network. What is a difference between all of them is the mobile device. If you experience this everywhere in the netherlands, try a different phone.

the first debugging step you offered is to change my mobile which I’ve been using with the same network for a more than a year.
after doing some checks myself. Turns out I hit the daily FUP of 20gb.
is there a way to set this FUP higher?
I've been on the train most of the day and just streaming video. This is a very normal and “reasonable “ usage in my opinion.

If you have an unlimited subscription, you can add free TOP UPS. When the 20Gb is up, go into the Odido app and order a free topup of 2 Gb. You can do this the whole day, there is no limited on the amount of topups. At 00:00 the 20 Gb bundel is added again.
